A healthy ode to Saint Patrick’s Day 2012. Family Fresh Cooking’s Toasted Walnut Spinach Pesto. A wonderful and healthy alternative to summer basil and pine nuts. We have spinach and walnuts in our fridge year round! It was a hit for the whole family – Avery loved helping me make it. My changes: I added one more garlic clove, an extra sprinkle of parmesan cheese and an extra swirl of olive oil. Bon appetite!
